How to cook soup from sorrel

Ingredients

  • water - 3 l;
  • meat on the bone (pork or beef) - 400 gr;
  • potatoes - 5 pcs;
  • onion - 1 pc;
  • carrots - 1 piece;
  • vegetable oil - 3 tablespoons;
  • sorrel - 3 bunches;
  • raw chicken egg - 1 piece;
  • Sour cream for adding to the prepared dish;
  • salt, spices to taste.

Preparation

  1. Prepare the meat broth. For this, boil the meat on the bone for 1 hour.
  2. Once the broth is ready, take out the bones and remove the meat from them, putting it back into the pan.
  3. Add the potatoes, cut into small pieces with salt and spices, into the broth.
  4. While he is cooking, prepare the rest of the vegetables. Carrot grate onion, and chop the onion head finely. They need to be fried in a frying pan with butter until golden.
  5. Now rinse the sorrel and finely chop it.
  6. Sorrel with carrots and onions add to the pan.
  7. Readiness of cabbage soup should be determined by the color of sorrel. It changes quickly enough. As soon as this happens, pour the beaten egg into the soup with a thin stream. Boil the cabbage soup with sorrel for another 2 minutes, stirring regularly.

Such soup from sorrel is also called green borscht, despite the fact that many are accustomed to seeing beets in a borsch. There are also original recipes for soups, including both sorrel and beets.

Consider a vegetarian version of cooking soup from sorrel. Instead of cabbage in borsch we suggest using sorrel.

How to cook borscht with sorrel

Ingredients

  • water - 3 l;
  • chicken on the bone - 300 g;
  • potatoes - 5 pcs;
  • beet - 2-3 pieces;
  • onion - 1 pc;
  • carrots - 1 piece;
  • vegetable oil - 4 tablespoons;
  • sorrel - 2 bunches;
  • apple cider vinegar - 1 tablespoon;
  • salt, spices to taste.

Preparation

  1. Put the chicken in water and cook for 30 minutes.
  2. Cut the onions, and the beets and carrots grate on a large grater, fry the onions and carrots on the oil for 5 minutes first, then add the beets and apple cider vinegar to them, fry the vegetables for another 5 minutes.
  3. Cut the potatoes into cubes, place it in the chicken broth along with the roast. Salt and pepper the dish. Boil the soup for 20 minutes.
  4. Sorrel wash and cut fairly large. Add it to the pan. Cook the borscht for 2 more minutes.

How to cook sorrel for the winter

Dishes from fresh sorrel are seasonal. But we can add sorrel to food all year round, if we prepare it for the winter in the following way.

  1. Rinse the sorrel thoroughly and remove the petioles.
  2. Prepared leaves of sorrel slice the size that you prefer.
  3. Place the sorrel in a liter jar and pour the plant with cold water.
  4. Close the covers tightly and put them in a cool dark place.
