How to bake the wheel?
A shank is part of a pig carcass thatis located closer to the knee joint. It consists mainly of tissues, as well as the muscles of the animal. This part of the carcass is known as Veprevo knee (Czech language), iceberg (German), Pigz nakl (English).
There are quite a few recipes forcooking shank, but mostly it is used in baked form. Some prefer to bake it raw in foil or in a sleeve, while others prefer it after preliminary boiling. Therefore, before you bake the wheel, think about what option you like best. Below we will consider one of the most common recipes for baking pre-boiled shank.
- 3 small shanks
- 2 heads of onions
- Carnations up to 10 pieces
- Bulgarian pepper 10 pieces
- Black pepper powder
- Two laurel leaves
- One head of garlic
- Up to one and a half liters of light beer
- Up to 100 ml soy sauce
Cooking and marinade preparation
Before cooking, all the shanks should be washed. Then you need to put them in a medium-sized cooking pot and put onions, cloves, pepper, add water. Before baking the pork steak, it should be cooked for about two hours, periodically removing the resulting foam.
After cooking you need to drain the broth. Then you need to prepare marinade for shanking. To do this, in a suitable container you need to pour the beer, add soy sauce, salt and pepper to taste, your favorite spices and broth, in which sticks were cooked. Marinade should completely cover the wheel, soak in the marinade until 6 o'clock.
On the surface of the pickled shank they makecuts and inserted there slices of garlic, previously divided into parts. Next, it should be placed on a baking tray, and before baking the pillet in the oven on the baking tray, add the previously prepared marinade. Bake it around 1.5 hours at a temperature of 180 degrees. The marinade should be watered on the surface of the shank during the entire baking time every fifteen minutes. And after 40 minutes of baking, the shank should be turned in order to be juicy and beautiful on both sides.
Before baking the wheel in a foil or sleeve,it is necessary to remove excess marinade, to smear all visible surface with mayonnaise, kefir or any available sauce, and also it is possible to use vegetable oil, where beforehand add any spices to taste.

The handles can be served with different side dishes and underdifferent sauces. Despite the fact that cooked in the oven shank, is a high-calorie dish, sometimes you can still pamper yourself, please your loved ones.
